For all those who love BBQ , this is the Thai grilled chicken for you. A simple recipe with full of flavors. I have used coconut milk in the marination ingredients, it keeps chicken moist during grilling.

For Marinade

  • 2 tablespoons ‏fish sauce
  • 2 teaspoons ‏black pepper
  • 1/4 teaspoon ‏salt
  • 1/4 teaspoon ‏white pepper
  • 1/4 cup ‏coriander
  • 1/2 cup ‏coconut milk
  • 4 cloves ‏garlic
  • 1 inch ‏ginger
  • 1 tablespoon ‏brown sugar
  • 8 breast/ thigh pieces ‏chicken

For Sauce

  • 1/4 cup ‏vinegar
  • 1/4 cup ‏sugar
  • 1 tablespoon ‏crushed red chili
  • 1/4 teaspoon ‏salt
  • 1 tablespoon ‏shallots, chopped

Directions:

  1. Put the coriander, garlic and ginger in a processor and process until a paste is formed. Transfer this mixture to a bowl. Add salt, white pepper, black pepper, fish sauce, coconut milk and mix well.

  2. Coat the chicken with this mixture and put it in an air tight box. Refrigerate for at least 2 hours ( for best result leave it for 12 hours)

  3. Heat a wok and add all the sauce ingredients. Bring to boil with constant stirring. Reduce the heat and simmer for 8-10 min. Keep stirring until it becomes thick. Turn off the heat.

  4. Preheat the grill to medium, and before arranging the chicken pieces on the grill tray coat it with oil. Cook for 15-20 min, flipping the chicken as needed. Insert a knife into one of the pieces and check if the chicken is fully cooked. The knife should run clear

  5. When the chicken is fully cooked trasfer it to the serving dish and serve with hot dipping sauce.
