Swordfish kebabs: A lemon glazed swordfish skewers when served over the bed of cooked rice, makes a perfect complete meal.

Ingredients

  • 1 lb ‏swordfish, cut into 1-2 inch chunks
  • 1/4 teaspoon ‏salt
  • 1/4 teaspoon ‏black pepper powder
  • 3 tablespoons ‏lemon juice
  • 2 tablespoons ‏olive oil
  • 1 teaspoon ‏chili paste
  • 2 cloves ‏garlic, chopped
  • 1 tablespoon ‏grated lemon zest

Directions:

  1. Soak skewers in water for a atleast 30 min

  2. In a bowl add all the ingredients and mix well

  3. Add the fish chunks and toss altogether. Make sure that the fish chunks are well coated with the mixture. Refrigerate for 30 min

  4. Lightly grease the skewers with oil and thread the fish chunks onto the skewers.

  5. Place the skewers on a preheated grill pan and grill the swordfish kebabs for about 8-10 min until golden brown on both sides. Serve the skewers over cooked rice and ENJOY!
