A great way to impress your family with this low fat but delicious chicken breast stuffed with Greek fillings. Also best for kids who do not like vegetables in their meal.
It tastes best with mashed potato or couscous.
- 4 boneless chicken breasts
- 2 cups spinach
- 1 1/2 cup cheddar cheese, shredded
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, chopped
- 1/2 teaspoon crushed red chili
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3/4 cup bread crumbs
Add spinach, garlic and olive oil. Cook over medium heat until spinach wilts.
Chop the spinach and add cheese. Stir in salt, black pepper and red chili. Mix well.
Preheat the oven to 350 F.
Add the small pocket in the side of each breast piece. Add the spinach mixture in each pocket
Roll the pieces with bread crumbs and place in baking dish. Add butter and bake for 25-30 min..
Serve hot with mashed potato and ENJOY!
