Spanish Rice: A perfect side dish which is simple and easy to make. It goes great with chicken/fish/beef meal.

Ingredients

  • 1 ‏green pepper, chopped
  • 1 teaspoon ‏salt
  • 1 ‏onion, chopped
  • 2 1/2 cups ‏water/chicken broth
  • 1 cup ‏tomato sauce
  • 2 tablespoons ‏butter
  • 1/4 teaspoon ‏black pepper
  • 2 ‏garlic cloves, chopped
  • 1 1/2 cups ‏rice, soaked in water for 30 min
  • 1/4 teaspoon ‏cyanne

Directions:

  1. Heat oil in a pan. Add onion and stir fry until translucent.

  2. Add chicken stock, garlic, tomato sauce,cyanne, salt and pepper. Bring it to boil

  3. When it starts boiling add rice and saute for 2-3 min

  4. Now reduce the heat to medium. Cover and simmer for 12-15 min until the liquid is absorbed by the rice and rice is tender.

  5. Reduce the heat to low and cook for last 5 min. This will help the flavors to develop. Serve warm and ENJOY!
