Spanish Rice: A perfect side dish which is simple and easy to make. It goes great with chicken/fish/beef meal.
- 1 green pepper, chopped
- 1 teaspoon salt
- 1 onion, chopped
- 2 1/2 cups water/chicken broth
- 1 cup tomato sauce
- 2 tablespoons butter
- 1/4 teaspoon black pepper
- 2 garlic cloves, chopped
- 1 1/2 cups rice, soaked in water for 30 min
- 1/4 teaspoon cyanne
Heat oil in a pan. Add onion and stir fry until translucent.
Add chicken stock, garlic, tomato sauce,cyanne, salt and pepper. Bring it to boil
When it starts boiling add rice and saute for 2-3 min
Now reduce the heat to medium. Cover and simmer for 12-15 min until the liquid is absorbed by the rice and rice is tender.
Reduce the heat to low and cook for last 5 min. This will help the flavors to develop. Serve warm and ENJOY!
