A wonderful family treat is these crispy peanut butterscotch bars. These bars are simply irresistible and are super easy to make.
Ingredients
- 2 1/2 cups peanuts (salted)
For Crust
- 1/2 cup butter (softened)
- 3/4 cup brown sugar
- 1 1/2 cup flour
For Topping
- 1 cup Butterscotch Chips
- 2 tablespoons light corn syrup/honey
- 2 tablespoons butter
- 1 tablespoon water
- 1/4 teaspoon vanilla essence
Directions:

Preheat oven to 180 degrees. Lightly grease a 9 inch baking pan.

In a small bowl, beat butter and brown sugar until light and fluffy. Gradually add flour to the mixture and mix well.

Press prepared mixture into bottom of the pan in such a way that a thin and even layer is formed. Bake for 10 minutes in a preheated oven.

Remove from oven and sprinkle the peanuts.

Now for topping take a saucepan. Add butter, butterscotch chips, corn syrup/honey and water.

Cook on medium-low heat until chips and butter melted. Stir in vanilla essence and remove from heat.

Pour hot syrup over peanuts and bake again for 10 to 12 minutes or until golden.

Cool it completely and then cut into bars. Store in an airtight container and ENJOY it with your afternoon tea.
