CHEESE QUICHE not only tastes good, but is easier to make than you think. You can even make the pastry dough at home using the  following recipe. Hope you enjoy it!

Ingredients

For Pastry

  • 4 oz ‏Flour
  • 2 oz ‏Butter
  • 1 oz ‏Cheese
  • 2 tbsp ‏Cold water
  • ‏Salt a pinch

For Filling

  • one small ‏Onion
  • 4 oz ‏Mushrooms
  • 1 oz ‏Butter
  • 3 oz ‏Cheese
  • 2 ‏Eggs
  • 6 tbsp ‏Milk
  • 6 tbsp ‏Cream
  • ¼ tbsp ‏Salt
  • a pinch ‏Black pepper

Directions

  1. Sift flour with salt twice. Rub in the butter. Stir in the grated cheese. Add cold water and knead lightly. Roll out on a floured board and spread it across a deep 7 inch flan dish.
  2. Fry onions and mushrooms in butter. Drain and place in the pastry case. Beat eggs, milk, cream, grated cheese and add seasoning. Pour the batter carefully into the flan case. Sprinkle remaining cheese over the top. Bake in a preheated oven ( 220 deg C ) for 40-45 minutes.
