Iskender kebab is the best food of turkey. it normally consists of thin strips of lamb or beef, greased with tomato sauce which is then served over the bed of pita bread pieces along with the yogurt.

For Kebab

  • 450 gm ‏Lamb (top round cut into 1 inch cubes)
  • 1 ‏onion (puree)
  • 1/4 cup ‏lemon juice
  • 2 tablespoons ‏olive oil
  • 1/2 teaspoon ‏salt
  • 1/2 teaspoon ‏ground pepper

For Tomato Sauce

  • 1 can ‏tomato puree
  • 4 tablespoons ‏olive oil
  • 1 ‏garlic clove (crushed)
  • 1 teaspoon ‏sweet paprika
  • 1/4 teaspoon ‏red chili powder
  • 1/4 teaspoon ‏salt
  • 1/4 teaspoon ‏ground pepper
  • 2-3 tablespoons ‏water

For Yogurt

  • 1 cup ‏yogurt
  • 1 ‏garlic clove (crushed)
  • 1 teaspoon ‏lemon juice
  • A pinch of ‏salt and pepper

Directions:

  1. In a large bowl mix olive oil, lemon juice and onion puree. Add in lamb cubes and mix well.

  2. Cover and marinate the lamb cubes in the fridge for at least 2 hours.

  3. Now to prepare the yogurt Mix crushed garlic, yogurt, lemon juice and a pinch of salt and pepper in a bowl. Cover and place it in the fridge.

  4. In order to prepare the tomato sauce add olive oil and garlic in a pan. Place the pan on medium heat and saute for 1 minute.

  5. Add paprika, red chili powder and pepper.

  6. Stir and add tomato puree and water. Cook on medium heat for 6 to 8 minutes or until the sauce thickens.

  7. Add salt, mix and remove from heat.

  8. Preheat the oven to 350 F.

  9. In a bowl toss pita pieces with olive oil, salt and pepper.

  10. Place the pita pieces on a grease baking tray. Bake for 4 to 5 minutes or until crispy from outside, but remain soft from inside.

  11. Mean while season the lamb cubes with salt and ground pepper.Thread the lamb cubes onto a skewer.

  12. Preheat a grill pan or large skillet.

  13. Place the threaded lamb skewer on a grill pan and grill from both sides for 10 to 15 minutes or until golden.Take a serving plate place crispy pita squares and then lamb cubes on top of pita. Pour spicy thick tomato sauce on it. Spoon garlic yogurt on one side and Enjoy!!!
