Enjoy the light creamy chicken noodle soup with your family that you can serve in only half an hour. A wonderful combination of seasonal vegetables imparts a healthy flavor to this soup.

Ingredients

  • 2 cloves ‏garlic, chopped
  • 1 teaspoon ‏salt
  • 1/2 teaspoon ‏black pepper
  • 2 ‏onions, chopped
  • 3 ‏carrots, peeled and diced
  • 2 ‏potatoes, peeled and diced
  • 3/4 cup ‏celery, chopped
  • 1/4 cup ‏corns, frozen (optional)
  • 5 cups ‏chicken broth
  • 2 cups ‏chicken, cooked and shredded
  • 1/4 cup ‏flour
  • 1 cup ‏evaporated milk
  • 2 tablespoons ‏olive oil
  • ‏pinch of dried rosemary
  • 1/4 teaspoon ‏oregano
  • 1/4 teaspoon ‏dried thyme
  • 2 cups ‏egg noodles

Directions

  1. Heat olive oil in a large deep pan and add onion, carrots, potatoes, celery and garlic. Stir fry for 2-3 min.
  2. Add flour, oregano, thyme, rosemary, corns, salt and black pepper. Stir fry for 5 more min.
  3. Add broth and heat to boiling. When it starts boiling cover and simmer for half an hour until carrots, and potatoes are tender.
  4. Add chicken, noodles and milk. Cook until noodles are tender. Turn off the heat and serve hot.
