An easy recipe of delicious pancakes soft from inside and crisp on the outside, garnished with banana slices and maple syrup. Kids will love to have these pancakes in their breakfast.
- 1 1/2 cup flour
- 2 teaspoons baking powder
- 2 bananas
- 1 egg
- 1/2 cup chocolate chips (optional)
- 1/4 cup sliced bananas (optional)
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 2 tablespoons butter (unsalted)
- 1 cup milk
In a bowl add flour, sugar, salt and baking powder.
Using the fork mash the bananas until smooth. Add eggs, milk, butter and vanilla extract.
Pour the banana mixture into the flour mixture. Add the chocolate chips and cinnamon. Mix with the rubber spatula (the batter should be thick).
Heat the oil and 1 tablespoon butter in a non stick pan. Pour 1/4 cup batter and cook until the pancake turn golden brown (on both sides).
Top with maple syrup, sliced bananas and serve.
